Start from what your knife is doing
Do I need every stage?
No. The two discs that came with your sharpener cover everyday sharpening. Most people add Uzumaki first — ten seconds a day keeps every knife sharp between sharpens. Each disc is a complete job on its own.
Will they fit my sharpener?
Yes — every Togi Scale disc fits every Hatori rolling sharpener, at both 15° and 20°. Swap discs in seconds; the magnetic angle block does the rest.
How often do discs wear out?
They don't, in any practical sense. Used correctly, the discs keep their cut for years. You buy a new stage, not a replacement.
