Descrizione
Some cuts of meat are simply big: a whole brisket, a pork shoulder, a rack of ribs, a joint with the bone in. This XL butcher's knife is made for them. Its 21 cm blade is long and wide, so one stroke goes a long way, and the weight of the steel does a lot of the work.
Kaji 鍛冶 means the forge: the Hatori line of hand-forged carbon-steel cleavers and butcher's knives, hammered or black-forged, each with a wooden handle. This one is forged 1080 carbon steel with a hammered finish and a bright polished edge. The spine is 3 mm. The handle is dark wenge wood on a full tang, held with three steel rivets. It arrives sharp out of the box.

Interesting take on the design of the razor. Still getting used to the angle and the amount of pressure needed to shave. Really needs a lighter touch (pressure) for the shave.
