The Hatori Diamond Rolling Knife Sharpener is a leather roller that sharpens by rolling. Hold the knife on the magnetic block, roll along the blade, and the edge is sharp in about 30 seconds.
A diamond disc sits on one end of the roller and a honing disc on the other. The magnetic block holds your knife at a steady 15° or 20°, so every pass lands at the same angle. Two discs, Arato and Nakato, come with it. It is the heart of Togi 砥, the Hatori sharpening system.
